8-Hydroxygenistein

Antioxidant

8-Hydroxygenistein (8-OHG) is an antioxidant known for its ability to scavenge reactive nitrogen species like nitric oxide (NO) and superoxide anion (O₂⁻). This compound, a member of the ortho-dihydroxy isoflavone class, exhibits stronger antioxidant activity compared to its parent compound, genistein. Its concentration is highly correlated with the antioxidant capacity of soy sauce, demonstrating stability even after exposure to high temperatures. 8-Hydroxygenistein holds potential for applications in food science, particularly in research focused on preventing oxidative damage.
