β-Lactoglobulin

Globular Protein

β-Lactoglobulin is a small globular protein belonging to the lipocalin family and serves as a significant whey protein source. It is rich in essential and branched-chain amino acids, including leucine, isoleucine, and valine, and exhibits antioxidant properties due to its unique structural features, including two disulfide bonds and one free thiol group. Additionally, β-Lactoglobulin functions as a ligand transport agent and is recognized as a major allergen in milk, making it a valuable target for research aimed at developing safe hypoallergenic dairy products.
