Chitosanase

Chitosanase

Chitosanase is a glycosyl hydrolase that specifically targets the endo hydrolysis of β-1,4-glycosidic bonds in partially acetylated chitosan, effectively producing chitosan oligosaccharides (COS). This enzyme facilitates the transformation of high molecular weight chitosan into functional chitooligosaccharides with lower molecular weight. Chitosanase is widely used in various research applications, including biochemistry, biotechnology, and the development of chitosan-based materials.
