Erythorbic acid

Food Additive

Erythorbic acid is a potent antioxidant that primarily functions as a food additive. It enhances the radiation resistance of Listeria monocytogenes and effectively reacts with free radicals, thereby reducing oxidative damage in food products. Its application includes preventing oxidative discoloration in meat, contributing to improved product stability. Additionally, erythorbic acid exhibits mild antiscorbic properties, making it relevant in various food preservation contexts.
