Gymnemic acid I

Antisweetness Agent

Gymnemic acid I is a triterpene saponin derived from Gymnema sylvestre that functions as an antisweetness agent primarily targeting the human sweet receptor type 1 (T1R2) and T1R3. This compound exhibits significant antidiabetic properties and has been shown to inhibit ribosomal protein biosynthesis. Additionally, Gymnemic acid I induces autophagy, which protects MIN-6 pancreatic cells from apoptosis under high glucose conditions by inhibiting mTOR phosphorylation activity. Its unique mechanisms make it valuable for research in diabetes and metabolic disorders.
