Rennin

Proteolytic Enzyme

Rennin, or Chymosin, is a proteolytic enzyme that primarily targets K-casein, facilitating the conversion of liquid milk into a semi-solid state. By cleaving K-casein specifically at the peptide bond between phenylalanine and methionine residues 105 and 106, Rennin extends gastric retention time of milk, a key factor in digestion. This enzymatic activity is crucial for various applications in dairy technology, particularly in cheese production, where it aids in curd formation.
