Sotolone

Olfactory Receptor Agonist

Sotolone is an olfactory receptor agonist known for its distinctive aroma, characteristic of caramel, curry, and walnut. It effectively activates the human olfactory receptor OR8D1, with EC50 values of 84.98 μM for the S enantiomer and 167.2 μM for the R enantiomer. Additionally, sotolone demonstrates moderate inhibitory activity against the rice blast fungus, making it relevant for research in both sensory biology and plant pathology.
