Tannase

Hydrolase

Tannase is a tannin acyl hydrolase that catalyzes the hydrolysis of ester bonds in gallotannins, complex tannins, and gallic acid esters, resulting in the release of gallic acid. This enzyme is essential in various industrial applications, including the production of instant tea, beer, fruit juices, and certain wines. Additionally, tannase facilitates the extraction and production of gallic acid, making it a valuable reagent in both research and industrial sectors.
