Fructose-alanine

Aroma Precursor

Fructose-alanine, an Amadori compound, serves as an important aroma precursor in the early stages of the Maillard reaction (MR). This compound has been isolated from various sources, including tobacco, miso, and white wine, and is known to significantly promote oxidative browning. Additionally, fructose-alanine correlates with the Maillard product furfuryl alcohol, contributing to a roasted, sweet aroma. Its applications extend to research in the food industry and tobacco processing.
